Concept: The Spirit of Craftsmanship
The name "HADO" is derived from characters meaning "the way of the blade." Much like the disciplines of tea ceremony, flower arrangement, judo, and martial arts, the Japanese concept of "do" signifies a path toward perfection—not just in technique and tools but in the atmosphere and experience as a whole. HADO embodies this distinctly Japanese philosophy, offering knives that go beyond mere sharpness. We craft each knife with passion, designed to bring the joy of ownership to all.
The blade's striking contrast, reminiscent of a Japanese sword, is intentionally left with a rugged, hammered texture rather than being polished smooth, lending it a bold character. Meanwhile, the edges along the spine and heel—the parts of the blade closest to the handle—are carefully rounded for a comfortable grip. The warm walnut handle has a refined design that develops a rich patina over time, fostering a deeper connection as you use it.
This collection includes three models: a 135mm Ko-Bunka, a 180mm Bunka, and a 210mm Kirituke Gyuto. The Ko-Bunka’s compact yet well-balanced size makes it perfect for those living alone or for quick meal prep. The Bunka is ideal for home cooks and families, while the Kirituke Gyuto is highly recommended for professional chefs.
The packaging features artwork by Philippe Weisbecker, a Paris-based artist with a global following. His drawings convey a distinctive vision that sets HADO apart from the traditional, austere image of Japanese knives.
